This Pulled Chicken Burrito Recipe is super quick and easy to put together. This is truly one of those recipes that is a family favorite and will quickly become one of yours!
In this chicken burrito recipe, we are using leftover bbq chicken from our Stuffed Squash recipe. I love to make a recipe and serve it two completely different ways to switch things up.
Ingredients for Chicken Burritos
- brown rice
- black beans
- bbq pulled chicken
- tortillas
- toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, cilantro, salsa, lime, etc.
How to Make Pulled Chicken Burrito Recipe
If making brown rice and not using pre-packaged, make 2 cups of rice per directions on packaging.
In a medium saucepan, bring 2 cups of water and a pinch of salt to a boil. Reduce the heat to simmer and cook for 10-15 minutes, until the chicken registers 165° on an instant read thermometer. Turn off the heat and let the pot sit for 10 minutes covered.
Shred the chicken in a large bowl with 2 forks or a mixer as shown in the video below.
Fold the black beans into the rice.
Divide the rice and bbq pulled chicken between the tortillas. Add your favorite toppings and roll to close!

Pulled Chicken BBQ Recipe

Ingredients
- 1 c brown rice
- 1 15 oz. can black beans, drained and rinsed
- bbq pulled chicken
- 4 large tortillas
- toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, cilantro, salsa, lime, etc.
Instructions
In a medium saucepan, bring the rice, 2 cups of water and a pinch of salt to a boil.
Reduce the heat to simmer and cook for 45 minutes, until the rice is tender.
Turn off the heat and let the pot sit for 10 minutes covered.
For the black beans into the rice.
Divide the rice and bbq pulled chicken between the tortillas. Add your favorite toppings and roll to close!
Notes
To make the bbq chicken: Bring a medium pot of salted water to a boil. Add the chicken (ensuring the chicken breasts are fully covered by water) and reduce the heat to low simmer. Cook for 10-15 minutes, depending on the size of the chicken breasts. The chicken is done when the thickest part of the breast readers 165° on an instead-read thermometer.
Transfer the chicken to a large bowl and allow to slightly cool. Shred with two forks or a hand mixer. Stir in the bbq sauce until fully combined.
