How To Make Easy Pancake Bites
Step 1: Preheat oven to 350 degrees F. Spray mini muffin tin with non stick cooking spray.
Step 2: Whisk together wet ingredients: eggs, milk, oil, and syrup in a medium bowl. In a separate large bowl mix together dry ingredients: flour, baking powder, and salt. Then add dry mixture to wet ingredients, and stir just until mixed (don’t over mix, it’s okay if the batter is lumpy). This will ensure that your pancake bites are fluffy and not dense.
Step 3: Pour batter into each muffin tin about 3/4 of the way full.
Step 4: Add in chocolate chips, blueberries, or toppings of choice.
Step 5: Bake for 10-12 minutes until edge of each pancake bite is golden brown. Adjust cooking time as needed based on individual oven.
Step 6: Serve warm, or store in an airtight container.

Baking Tips

Storage
Store pancake bites in an airtight container or ziploc bag for 3-4 days in the refrigerator, or in a freezer bag for up to 1 month (although they are usually all gone before that happens!)
To reheat, warm in microwave for 10-20 second increments until desired temperature.

I have not tested this recipe with almond milk, or almond flour however I imagine they would come out well. It might be best to use your favorite gluten free, dairy free pancake mix that you already love in order to ensure best results if making these for the first time.
Can I use a 12 cup muffin pan?
Yes! The pancake bites will simply be larger, and may need a slightly longer bake time to make sure they are done all the way through.
