These stuffed zucchini boats are a great low carb meal option that the entire family will enjoy. One of my favorite ways to enjoy zucchini is to stuff it and serve as the main course. What I love about this dish is that it’s super versatile and can be made to fit your families taste buds!

If you simply enjoy zucchini or have a garden that is overflowing, stuffed zucchini boats are a great option to use up quite a bit of zucchini before they go bad. You can also use up a lot of zucchini in my Cheesy Keto Zucchini Hot Dish Casserole. It’s equally as delicious.
Tips For Making Zucchini Boats
- If the zucchini wants to roll around and not stay in place, using a knife and cut off a small portion of the skin to sit flat.
- You can replace the ground chicken with ground turkey, Italian sausage, ground pork or even lean ground beef.
- Use your favorite brand of marinara sauce. If sticking to a keto or low carb diet I recommend Rao’s.
- While I recommend mozzarella and grated parmesan cheese in this zucchini boat recipe, you can swap out for freshly grated parmesan, mozzarella balls, fontina or provolone cheese.
Ingredients for Chicken Stuffed Zucchini Boats
- zucchini
- ground chicken – you can also use ground turkey or ground beef if you prefer.
- garlic
- pasta sauce
- mozzarella
- grated parmesan
How Do You Make Stuffed Zucchini Boats?
Preheat the oven to 400°.
Spray a baking dish or tray with cooking spray to prevent the zucchini from sticking.
Cook ground chicken over medium high heat in a skillet.
Reduce the heat to low and add in the pasta sauce and garlic. Allow to cook for 3-5 minutes to heat the pasta sauce through.
Cut the zucchini in half lengthwise and scoop out the seeds with a spoon.
Fill the zucchini boats with the meat sauce mixture.
Sprinkle with parmesan and mozzarella cheese.
Cover with foil and bake for 35-40 minutes until the cheese has melted.
If you would like the cheese to be golden brown stick under the broiler for a few minutes. Be sure to watch so the cheese doesn’t burn.
Can you freeze zucchini boats?
This is a great question. I don’t recommend freezing the zucchini boats themselves as the zucchini will soften and become mushy when they thaw. However, you can freeze the meat mixture for the boats for up to two months. All you need to do is thaw the filling and then spoon it into the zucchini, top with cheese and bake for a super easy weeknight meal.
